Anti-deep-fried chicken w/roasted red potatoes

Today’s post is special: we are taking part in The FaveDiets Blog Hop, The Healthy Hop: Your Favorite Healthy Low Cost Recipes. It is our first time and we are very excited. 

For today’s post I picked a very simple recipe I tried just a few days ago. Hope you like it too: it is easy, fast, healthy and budget-friendly. 

Deep-frying and chicken seem to go together in eating habits of many people. But is it really healthy? And also think about all this oil you need. Thumbs down! But what to do when your kids (and big kids too) want their chicken crispy on the outside and soft and moist on the inside? There is a great trick that I learned from Semi-Homemade Cooking’s Sandra Lee’s and simplified for everyday use. They will love it, guaranteed.

Now a side dish. Everybody likes French fries, but it is frying again (yes you can buy some frozen stuff and heat it up but it never comes even closer). The solution is simple: roasted potatoes. Go for red ones - they’re the best for simple roasting, and when in season are inexpensive too. 


Plus, you can use the oven for both the chicken and the potatoes at the same time - save on your PG&E bill:)

Anti-deep-fried chicken w/roasted red potatoes 

Ingredients (serve 4):
  • 1-1 1/2 lb chicken tights, boneless (not more than $4 at our local Lucky)
  • 1/2 cup flour (10 cents)
  • 2 egg (45 cents)
  • 1 cup dried breadcrumbs (you can just use your bread leftover - cut into cubes, add 1 tbs vegetable oil and dry in the oven - 30 cents)
  • 2 lb red potatoes (69 cents/lb at fruit barn on Pacheco Pass - California)
  • 1 fresh rosemary sprig (from backyard or little in-pot garden, freebie)
  • 2 tbsp olive oil (40 cents)
  • salt (freebie)
Total: $6.55, $1,64 per serving

Directions:
  1. Start with potatoes since they require more time in the oven. Preheat the oven to 350F (180C).
  2. Wash potatoes really well but do not peal.
  3. Cut them quarters, season with oil, salt, rosemary, mix well (you may want to put it in a plastic bag and shake).
  4. Place on a grated pan.
  5. Roast in the oven for 30-40 min or until ready.
  6. Prepare chicken: wash it under cold water.
  7. Whisk eggs.
  8. Deep chicken in egg, then roll in flower, deep in egg again and then roll in dried breadcrumbs.
  9. Place on grated pan and roast in the preheated to 350F (180C) oven for 15-20 min (make sure it doesn’t get over-roasted so that it is dry on the inside).
  10. Serve hot with roasted red potatoes and your favorite sauce (BBQ, simple ketchup or anything you like).
Simple and delicious dinner for 4 made in less than an hour and for under $7. Awesome!
