Quick fix cinnamon rolls

There are Saturday (and Sunday too) mornings when you sleep in and while laying in bed realize you ran out of all breakfast stuff - cereal, milk, eggs etc. You are too lazy to go grocery shopping (it is your relax time, anyways) or go out for breakfast or brunch (pijama day, yes!) but starving is also not a good way out. For days like that I have a simple solution that I call ‘quick fix cinnamon rolls’. It is an easy and simple recipe requiring very few ingredients that you always have in your kitchen. This is a no-yeast recipe that makes it a quick fix.

Anti-deep-fried chicken w/roasted red potatoes

Today’s post is special: we are taking part in The FaveDiets Blog Hop, The Healthy Hop: Your Favorite Healthy Low Cost Recipes. It is our first time and we are very excited. 

For today’s post I picked a very simple recipe I tried just a few days ago. Hope you like it too: it is easy, fast, healthy and budget-friendly. 

Deep-frying and chicken seem to go together in eating habits of many people. But is it really healthy? And also think about all this oil you need. Thumbs down! But what to do when your kids (and big kids too) want their chicken crispy on the outside and soft and moist on the inside? There is a great trick that I learned from Semi-Homemade Cooking’s Sandra Lee’s and simplified for everyday use. They will love it, guaranteed.

Roasted chicken fajitas

My journey through Mexican food continues. After making tacos I decided to try and make fajitas. Actually, I prefer soft tacos to crunchy ones so the idea of using nice soft tortillas sounded good to me. 

Chicken is one of our all time favorites so I decided to make chicken fajitas. The only question was how to prepare chicken. I am trying to avoid fried stuff, and boiled chicken sounds dull and reminds me of plain soup at elementary school. Roasting sounded just perfect.

Andersen’s split peas soup w/garlic bread

Two weeks ago Dave and I were driving from LA back to San Jose and stopped at Buellton for a bowl of the famous Andersen’s split peas soup. Dave loves it, and I was very excited about trying it for the first time. It turned out to be very tasty and a little bit different from the peas soup I got used to back in Russia. When we finished our lunch, I headed to the restaurant store to buy some stuff for my kitchen. I ended up with some Andersen’s seasoning and a lb of peas - yes, I know, you can buy them at any grocery store but the pack contained the recipe, and it was inexpensive so it was hard to resist. Branded soup bowl we had at home from own of Dave's prior visits to the restaurant.

In-kitchen BBQ

Last night I was going to make pork fried rice for dinner (Dave’s favorite) but wasn’t attentive enough taking the meat out of the freezer - it turned out to be chicken breasts:) Chicken fried rice he likes too but I wanted to try something a little bit different, just for a change. Since I had a bunch of wooden skewers I decided to make chicken BBQ, and to save time (hungry husband = unhappy husband) do it indoors just on a grill pan. It was easy, fast and turned out very yummy and also fun to eat. I just wish I had more spices/sauces in my pantry last night.
