Italian Sausage & Potato Pot

There are dishes that I call "put in the oven and forget". They are easy, time-saving and also good for you - no frying just roasting or baking. When you have a busy day but still want to endulge in a nice home made meal, this is the best choice.

I had some Italian sausages in the fridge and wanted to use them. What would go with them? Potatoes!

Here is what I came up with. Easy and simple.


Italian Sausage & Potato Pot


Ingredients (make 4-5 servings):

  • 5 Italian sausages
  • 5-6 medium-sized potatoes
  • 1/2 red bell pepper
  • 2 garlic gloves
  • 2 tbsp vegetable oil
  • salt, pepper

Directions:

  1. Peel the potatoes and cut them into pieces. 
  2. Place the potatoes in a ceramic pot. Add chopped bell pepper, minced garlic, salt, pepper and vegetable oil (the best option is olive oil but sunflower oil will do too). Mix well. 
  3. Preheat a grill pan and grill the sausages for 20 seconds each side. Let them cool a little.
  4. Preheat the oven 350F (180C).
  5. Cut the sausages into pieces. Add to the pot. Mix well. Cover. 
  6. Place the pot into the oven and bake for 40-60 min or until the potatoes are tender.
  7. Serve and enjoy!
